Essential ingredients

We will need easily accessible ingredients for this recipe that you can find in any store. 

Herbs - choose soft, fresh herbs like parsley, chives, oregano, and tarragon.

Pancetta - we adore pancetta, but bacon will work great in this recipe, too.

Asparagus - use fresh green asparagus and chop off any woody ends.

Heavy Cream - makes the frittata soft and delicious. Optionally, choose milk or Greek yogurt, or leave it out if you don't eat dairy.

Soft Cheese —You can use any soft cheese you like. We would like to add farmer's cheese or feta.

Storing

We recommend that you serve this Frittata as soon as possible. It's best when it's still warm.

Optionally you can store the prepared Herb Frittata with Asparagus and Pancetta in the fridge for up to 2 days. Before serving, reheat. Preheat the oven to 200 °C / 400 °F.. Place the Frittata in the oven-safe skillet. Add to the oven and reheat it for 5 minutes. Serve warm.

METHOD

    Chop the herbs and add them to a small bowl. Chop off any hard parts of the asparagus. Cut the pancetta into small cubes. Set a rack on the lowest part of the oven and preheat it to 200 °C / 400 °F. Grab a 24 cm (10-inch) oven-safe pan. We are using Tefal Ingenio Unlimited (24 cm) with a removable handle.

    Add eggs, herbs, heavy cream, salt, and pepper to a bowl and whisk to combine. Set a pan over medium heat. Add pancetta and pan-fry until golden. Add the asparagus and pan-fry for a minute, then add the egg mixture. Reduce the heat to low heat and cook for 2 - 3 minutes for the eggs to cook, stirring consistently. Add the cheese and stir.

    Transfer the pan to the oven and bake for 8 - 10 minutes at 200 °C / 400 °F or until golden and cooked. Remove from the oven. Optionally sprinkle with fresh herbs and shredded parmesan cheese. Serve.
